Apple Pie Spiced Cookies

I admit, I’m definitely a warm, chocolate chip cookie kind of girl. But when I’m all out of those little cocoa morsels and I’m craving some straight-from-the-oven baked treats, these Apple Pie Spiced cookies are definitely my next favorite in line! They’re just the right mix of chewy and crunchy. Try them this season as an unexpected addition to all those traditional Christmas cookies. I hope you’ll enjoy them as much as my family does.

Apple Pie Spiced Cookies

  • Yield: About 35 cookies 1x

Ingredients

Units Scale

For Cookies:

  • 1 cup white sugar
  • 1 tsp baking soda
  • 1 tsp cream of tartar
  • 1/2 tsp salt
  • 1/4 c. shortening
  • 1/4 c. butter, softened to room temp
  • 2 Tbsp milk
  • 1 tsp apple pie spice**
  • 1 tsp real vanilla
  • 1 egg
  • 2 cups freshly ground whole wheat flour ( I use hard red or hard white wheat)

For Topping:

  • 2 tsp white sugar
  • 1/2 tsp cinnamon

**For Apple Pie Spice (mix together and store in an airtight container):

  • 1/4 c cinnamon
  • 2 tsp nutmeg
  • 1 tsp allspice
  • 1 tsp ground ginger

Instructions

  1. In a large bowl, combine all ingredients except the flour (not including the topping). Use a mixer to blend well. Stir in the flour until thoroughly combined.
  2. Shape the dough into walnut sized balls, and place them about 2 in. apart on an ungreased cookie sheet. Use a fork to slightly flatten each cookie.
  3. Combine the sugar and cinnamon for the topping, and sprinkle over each cookie.
  4. Bake at 375 degrees for 8-10 minutes, or until just turning light brown around the edges. They might look slightly undercooked, but they’ll be perfect once they cool. If you over bake them a little, they’ll be more crunchy than chewy. Transfer to a wire rack to finish cooling.
