For Cookies:
- 1 cup white sugar
- 1 tsp baking soda
- 1 tsp cream of tartar
- 1/2 tsp salt
- 1/4 c. shortening
- 1/4 c. butter, softened to room temp
- 2 Tbsp milk
- 1 tsp apple pie spice**
- 1 tsp real vanilla
- 1 egg
- 2 cups freshly ground whole wheat flour ( I use hard red or hard white wheat)
For Topping:
- 2 tsp white sugar
- 1/2 tsp cinnamon
**For Apple Pie Spice (mix together and store in an airtight container):
- 1/4 c cinnamon
- 2 tsp nutmeg
- 1 tsp allspice
- 1 tsp ground ginger
Instructions
- In a large bowl, combine all ingredients except the flour (not including the topping). Use a mixer to blend well. Stir in the flour until thoroughly combined.
- Shape the dough into walnut sized balls, and place them about 2 in. apart on an ungreased cookie sheet. Use a fork to slightly flatten each cookie.
- Combine the sugar and cinnamon for the topping, and sprinkle over each cookie.
- Bake at 375 degrees for 8-10 minutes, or until just turning light brown around the edges. They might look slightly undercooked, but they’ll be perfect once they cool. If you over bake them a little, they’ll be more crunchy than chewy. Transfer to a wire rack to finish cooling.
