All Season Vegetable Soup for 2

Ingredients

Units Scale
  • 1/2 cup sliced green onions
  • 1 can vegetable or chicken broth (14.5 ounces)
  • 1 large carrot, sliced
  • 1 cup broccoli florets
  • 1 Tablespoon vegetable oil
  • 1 small potato, peeled and cubed
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. In a medium pan, sauté onions in oil until tender.
  2. Add the next four ingredients; bring to a boil.
  3. Reduce heat and simmer, uncovered for 5 minutes.
  4. Add broccoli, salt and pepper.
  5. Simmer, uncovered for 7 minutes or until vegetables are tender.

Notes

Variation

  • Double ingredients to serve 4
  • Add 1 clove of garlic, grated and sauté with onions
  • Add cauliflower florets to soup when you add broccoli
