- 1 pound breakfast sausage
- 1/4 cup minced onions
- 1/4 cup chopped green pepper
- 2 (12 ounce) cans refrigerated biscuits dough
- 6 eggs beaten
- 6 Tablespoons milk
- 1 cup shredded cheddar cheese – Mozzarella works good too, or both
Instructions
- Preheat oven to 400°F
- Heat a large deep cast iron skillet over medium to medium-high heat.
- Crumble and brown the sausage in the preheated skillet, add onions, and green pepper.
- Cook until the sausage is cooked through. Remove, drain set aside to cool.
- Wisk together the eggs, milk, ½ cup of the cheese and, set aside.
- Separate the biscuit dough into 20 individual pieces. Flatten each biscuit out flat. Line the bottom and sides of the muffin cups.
- Place cooled sausage mixture between the cups – pour the eggs mixture evenly into each cup. Sprinkle tops with remaining cheese.
- Bake in preheated oven for 18 to 20 minutes or until filling sets.
