A Complete Breakfast in a Finger Food

Ingredients

  • 1 pound breakfast sausage
  • 1/4 cup minced onions
  • 1/4 cup chopped green pepper
  • 2 (12 ounce) cans refrigerated biscuits dough
  • 6 eggs beaten
  • 6 Tablespoons milk
  • 1 cup shredded cheddar cheese – Mozzarella works good too, or both

Instructions

  1. Preheat oven to 400°F
  2. Heat a large deep cast iron skillet over medium to medium-high heat.
  3. Crumble and brown the sausage in the preheated skillet, add onions, and green pepper.
  4. Cook until the sausage is cooked through. Remove, drain set aside to cool.
  5. Wisk together the eggs, milk, ½ cup of the cheese and, set aside.
  6. Separate the biscuit dough into 20 individual pieces. Flatten each biscuit out flat. Line the bottom and sides of the muffin cups.
  7. Place cooled sausage mixture between the cups – pour the eggs mixture evenly into each cup. Sprinkle tops with remaining cheese.
  8. Bake in preheated oven for 18 to 20 minutes or until filling sets.
