Pumpkin Pie Bars

CRUST:

  • 1 C. flour
  • 1/2 C. quick oats
  • 1/2 C. brown sugar
  • 1/2 C. butter

FILLING:

  • 2 C. pumpkin
  • 3/4 C. buttermilk
  • 2 eggs
  • 3/4 C. sugar
  • Pinch of salt
  • 1 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/4 tsp. cloves

TOPPING:

  • 1/2 C. brown sugar
  • 2 T. butter
  • 1/2 C. chopped nuts

Instructions

  1. Combine crust ingredients in a mixing bowl and mix until crumbly. Press into a greased 9 x 13″ pan. Bake at 350°F for 15 minutes.
  2. Combine filling ingredients and beat well. Pour over baked crust and bake at 350°F for 20 minutes.
  3. Combine the next 3 ingredients and sprinkle over pumpkin bars and return to oven. Bake at 350°F for 20 minutes or until set. Serve at room temperature.
