Ingredients

CRUST:
- 1 C. flour
- 1/2 C. quick oats
- 1/2 C. brown sugar
- 1/2 C. butter
FILLING:
- 2 C. pumpkin
- 3/4 C. buttermilk
- 2 eggs
- 3/4 C. sugar
- Pinch of salt
- 1 tsp. cinnamon
- 1/2 tsp. ginger
- 1/4 tsp. cloves
TOPPING:
- 1/2 C. brown sugar
- 2 T. butter
- 1/2 C. chopped nuts
Instructions
- Combine crust ingredients in a mixing bowl and mix until crumbly. Press into a greased 9 x 13″ pan. Bake at 350°F for 15 minutes.
- Combine filling ingredients and beat well. Pour over baked crust and bake at 350°F for 20 minutes.
- Combine the next 3 ingredients and sprinkle over pumpkin bars and return to oven. Bake at 350°F for 20 minutes or until set. Serve at room temperature.
