Cake:
- 2 cups flour
- 1 TBSP baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 3 eggs
- 1 cup milk
- 1 cup vegetable oil
- 1 3/4 cups sugar
- 4 or 5 small, peeled apples, chopped up
Optional:
- 6 ounces of chocolate chips
- 1/2 chopped nuts
Topping:
- 1 1/4 cup all-purpose flour
- 1/2 cup light brown sugar tightly packed
- 1 3/4 cup sugar
- 1/4 teaspoon salt
- 6 Tablespoons unsalted butter
Instructions
- Preheat the oven to 350F and grease a baking dish.
- In a large bowl, whisk together the dry ingredients.
- In a separate bowl, beat the eggs, then add the milk, vegetable oil, and sugar, mixing until well combined. Gradually stir in the dry ingredients until just incorporated. Gently fold in the chopped apples, along with chocolate chips or nuts if using.
- Pour the batter into the prepared dish and spread evenly. In a small bowl, combine the flour, sugars, salt, and butter for the streusel topping. Mix until crumbly, then sprinkle evenly over the batter.
- Bake in two greased loaf pans for 1 hour and 20 minutes, until golden and a toothpick inserted in the center comes out clean.
- Allow it to cool slightly before slicing. Serve warm and enjoy with a cup of coffee or tea!
