- 2 C. oatmeal
- 2 eggs
- 1/2 C. whole wheat flour
- 1 tsp. baking soda
- 2 C. buttermilk or plain yogurt
- 1/4 C. oil
- 1 tsp. baking powder
- 1 tsp. cinnamon
- The night before, mix oatmeal and buttermilk in a bowl. Cover and refrigerate.
- In the morning, add the eggs and oil and mix thoroughly. Sift flour, baking powder, baking soda and cinnamon into the oatmeal batter. You can add chopped seasonal fruit or chocolate chips, as well.
- Spray a griddle with an oil spray and heat over medium heat. Fry the pancakes on the griddle, turning once. Any leftovers can be toasted for future breakfasts.
Serve with your favorites (syrup, fruit, nuts).
