Carrot Cake

This recipe is from Lehman’s Sapphire Cookbook Collection.

Ingredients

  • 3 cups chopped carrots
  • 1 teaspoon baking powder
  • 1 1/4 cup oil
  • 1 teaspoon baking soda
  • 1 2/3 cup white sugar
  • 2 cups flour
  • 1 tablespoon cinnamon
  • 4 eggs
  • 1/4 teaspoon salt

Instructions

  1. Blend chopped carrots and oil in a blender to form a puree.
  2. Place in a mixing bowl and add dry ingredients. Stir together.
  3. Add eggs and beat on medium-low for 3 minutes.
  4. Bake in a greased 9×13″ pan at 350 degrees Fahrenheit for 45 minutes or until done.
