Blueberry Coffee Cake

Ingredients

Units Scale

For cake:

  • 3/4 cup sugar
  • 1/4 cup shortening
  • 1 egg
  • 1/2 cup milk
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups flour
  • 2 cups blueberries

For topping:

  • 1/2 cup sugar
  • 1/3 cup flour
  • 1/4 cup butter
  • 1/2 teaspoon cinnamon

Instructions

  1. Cream sugar and shortening.
  2. Add egg.
  3. Add sifted dry ingredients with milk.
  4. Pour into a greased 9×9″ pan.
  5. Sprinkle with topping. For topping, mix all ingredients.
  6. Bake at 375 degrees Fahrenheit for 40 to 50 minutes.
