Honey cornbread in a pan

Honey Cornbread

Ingredients

Units Scale
  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup honey
  • 1 cup milk
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1/4 cup butter (salted) for topping

Instructions

  1. Preheat your oven to 375°F (190°C). Grease an 8-inch square baking pan (you can also use a smaller cast-iron skillet)
  2. In a large bowl, whisk together the cornmeal, flour, baking powder, and salt.
  3. In a separate bowl, mix the honey, milk, melted butter, and eggs until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined and smooth. Do not over mix and stop once the clumps are gone.
  5. Pour the batter into the pan or skillet, spreading it evenly.
  6. Bake for 20-25 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
  7. Spread your salted butter on top of cornbread.
  8. Allow the cornbread to cool slightly before slicing and serving.
