Ingredients

- 1 1/4 C. quick rolled oats
- 1 1/4 C. milk
- 1 egg
- 1/2 C. canola oil
- 3/4 C. brown sugar
- 3/4 C. chocolate chips
- 1 C. pecans
- 1 1/4 C. flour
- 4 tsp. baking powder
- 1 tsp. salt
Instructions
- Combine oats and milk; allow to stand 15 minutes. Preheat oven to 400 degrees Fahrenheit. Stir egg, oil, 1/2 cup brown sugar, chocolate chips, 1/2 cup pecans into oat mixture.
- In a large bowl, combine flour, baking powder and salt. Add oat mixture to flour mixture, stirring just until all dry ingredients are moist.
- Fill lightly greased muffin tins 2/3 full and sprinkle with remaining brown sugar and pecans. Bake 20 to 25 minutes.
