Even though my children are grown, my daughter and I color Easter eggs every year. Fortunately, we have come up with a number of ways to use the hard-boiled eggs after Easter.
Deviled Eggs
Deviled eggs, a favorite of my family, probably comes to mind first. I don’t even use a recipe anymore – I just add mayo and spicy brown mustard, with a dash of salt and pepper, until the consistency is right, then sprinkle each egg with a dash of paprika.
Salads
There is almost an endless variety of salads you can make – here are five to try:
Chickpea and Tomato Salad: Open up and drain a couple cans of chickpeas, and add chopped tomato, onion, and hard boiled eggs, drizzle with a garlic Dijon vinaigrette and you have a side or a meal.
Egg Salad: I use the same ingredients as deviled eggs, I just chop up the eggs first and add some chopped scallions. Egg salad makes a great sandwich on whole wheat bread!
Tuna or Chicken Salad: Use a can or two of tuna or chicken, drain the liquid, and add mayo, celery and relish and a dash of dill. This is great on a bed of lettuce or with a few crisp crackers and a side of cottage cheese.
Potato Salad: Cut and cube cooked potatoes, add the eggs, along with mayo and mustard and a dash of vinegar. Add some finely cut onions if you prefer. Toss in some fresh dill and salt and pepper to taste.
Chef’s Salad: Make a typical salad with your favorite veggies, such as lettuce, tomatoes, and carrots, add a few chopped up hard boiled eggs and some ham cubes. Top with shredded sharp cheddar cheese and your favorite dressing.
Sandwiches
There are also sandwiches you can throw together, such as ham, sliced hard-boiled eggs, spicey mustard and a slice of tomato. The eggs are also good grated on top of toast for a quick and filling breakfast.
Red Pickled Eggs
You can also make red pickled eggs, using beet juice. Mix equal amounts of vinegar, sugar, water and red beet juice. Bring it all to a boil and pour over the eggs. Refrigerate for at least 24 hours before serving.
