Feel Good Soup (aka Broccoli and Cheese Soup)

Looking at the recipe, one might think it is just a simple Broccoli and Cheese soup; however, to our children it is so much more. My parents watch our girls, Brooklyn (7) and Addison (6) while we are at work – they have since birth so it is quite the blessing.
One day a few years ago, neither girl was feeling the greatest. My mom told them she’d make them some special soup. She whipped up a batch of her homemade Broccoli and Cheese Soup and after the girls ate it they felt better. We never thought anything of it until Addison was sick one day and asked for “Feel Good Soup.” I had no idea what she was talking about so I asked her to describe it. She said it was the soup the Grammie made her when she was sick; it made her feel better and she wanted it again.
Since that day, the girls often ask for “Feel Good Soup” – whether they aren’t feeling well or just need a pick me up. In our family, it’s not “Broccoli and Cheese Soup”, it is “Feel Good Soup” and to my girls it is more than a food, it’s like a warm hug from Grandma (Marilyn Link, mother of Customer Service Manager Sue Bukovitz).
Feel Good Soup
- 1/4 cup chopped onion
- 1 T butter
- 1-1/2 C. water
- 2 chicken bouillon cubes
- 1 bag broccoli cuts
- 6 oz. fine noodles
- 1-1/2 C. milk
- 1/2 pound Velveeta cheese, cubed
Cook noodles according to package directions. In another pot, oil onions, broccoli and bouillon cubes. Cook until tender. Drain noodles and add to mixture. Sit in milk and then cheese cubes. Cook until cheese is melted, stirring frequently.
