Turkey Tetrazzini with Homemade White Sauce
Ingredients:
2 c. cooked turkey, chopped
1/4 c. butter or oil
1/2 c. sliced onion
3/4 tsp. salt
1/4 c. flour
1/4 tsp. pepper
1/2 tsp. poultry seasoning
1/8 tsp. dry mustard
2 c. milk
1/2 c. shredded Cheddar cheese
2 T. chopped pimento (optional)
1/4 c. cooking sherry
4 oz. can mushrooms
7 oz. spaghetti or other pasta, cooked and drained
Directions:
In a large skillet, melt butter and saute onion. Blend in flour and seasonings. Remove from heat and gradually add milk. Stir and cook until it thickens. Add 1/2 cup cheese, pimento, sherry and mushrooms to white sauce. Place layer of spaghetti in a 2-qt casserole dish. Cover with a layer of turkey and then sauce. Repeat and finish with 1/3 cup cheese. Cover and bake 20 minutes at 400 degrees. Serves 10.
