This recipe is from Lehman’s Sapphire Cookbook Collection
- Total Time: 1 hour
Ingredients
- 1 1/4 C. cooking oil
- 3 C. white sugar
- 2 eggs, unbeaten
- 1 C. nuts
- 3 C. chopped apples
- 3 C. sifted flour
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp. cinnamon
- 1 tsp. nutmeg
TOPPING:
- 1/3 C. white sugar
- 1 tsp. cinnamon
- 1/2 C. chopped nuts
Instructions
Beat oil, sugar and eggs well. Add flour, soda, salt and spices. Last add apples and nuts. Pour into 9×13″ cake pan. Mix topping ingredients and spread on top of cake. Bake at 350°F for 30 to 40 minutes.

Great smell delicious taste fantastic recipe
I made it last night not sure I did it right it seemed wet on the insides but tast delicious
What kind of soda? Do they mean baking soda?
Ovens cook differently. When the time is up and the cake should be done, insert a knife in the center of the cake. It should come out clean and not gooey with cake batter still on it. If it does cook ten min more and check and repeat, as necessary until the knife inserted comes out clean. Yes I assume the soda is baking soda and not club soda, but that was a good question.
The soda in the recipe is baking soda.
This seems like a traditional German recipe for Apfelkuchen. If so, it is neat to see Lehman honor the Amish and German immigrant culture. If Lehman’s finds an Amish German-English dictionary to sell, we genealogists would truly welcome that. God’s Blessings to you all.

what if you don’t want to add nuts
3 cups sugar to 3 cups flour plus 1 1/4 oil seems like a lot of sugar and fat. I’m i reading it wrong?
I’ve made this cake twice. 40 minutes will not bake the cake correctly. Other sites call for 1 hr and 15 min. That was perfect my second time. Changed the oil to mostly apple sauce with 1/4 c oil. Also 3 cups sugar went to 1.5 cups maple syrup and 1.5 sugar. Used black walnuts. Omg the second time was fabulous. Served it at a meeting and people had 2-3 pieces and begged for the recipe.
