- Total Time: 45 minutes
- Yield: 12-15 muffins 1x
Ingredients

- 1 1/4 C. quick rolled oats
- 1 1/4 C. milk
- 1 egg
- 1/2 C. canola oil
- 3/4 C. brown sugar
- 3/4 C. chocolate chips
- 1 C. pecans
- 1 1/4 C. flour
- 4 tsp. baking powder
- 1 tsp. salt
Instructions
- Combine oats and milk; allow to stand 15 minutes. Preheat oven to 400 degrees Fahrenheit. Stir egg, oil, 1/2 cup brown sugar, chocolate chips, 1/2 cup pecans into oat mixture.
- In a large bowl, combine flour, baking powder and salt. Add oat mixture to flour mixture, stirring just until all dry ingredients are moist.
- Fill lightly greased muffin tins 2/3 full and sprinkle with remaining brown sugar and pecans. Bake 20 to 25 minutes.
- Prep Time: 20 min
- Cook Time: 25 min

Can the pecans be left out without affecting the recipe?
Can butter be used instead of canola oil?

Hi Naomi-Yes, you can leave out the pecans or substitute with another nut. Enjoy!
Hi Julie – We haven’t tried using butter with this recipe, but in a lot of baking recipes, you can use butter instead of oil. Just melt and cool the butter, then measure to the same amount of oil the recipe calls for. If you try it, let us know how the muffins turn out!
