Easy Corn Recipes: How to Savor Your Fresh Corn

Savor the flavors of fall! Fall (and late summer) is the perfect time to enjoy the bountiful corn that is available at your local store or farmer’s market.  Here some corn recipe ideas for serving fresh corn:

1. Freeze corn now and enjoy year-round.

Preserving corn is really easy!  Shuck and remove the silk from the corn and cut the kernels off the corn cob.  Using a corn stripper makes this process even simpler and mess-free. Place the kernels in airtight freezer boxes.  Date the freezer box and put it in the freezer. To reheat frozen corn, boil it for a few minutes.  The corn will taste the best if you consume it within six months of freezing, but it will be good for up to a year.Cutting corn off the cob for freezing

2. Mix with some seasoning for a easy side dish.

For a super simple side dish, add your frozen corn, three tablespoons of butter, a dollop of honey and a dash of Cajun seasoning in a medium sauce pan.  Add half a cup of water and simmer for about 25 minutes, stirring frequently.  You can also add red or green peppers, onions or chilis to spice it up a bit.

3. Add some HEAT to your corn.

To dress up your corn side dish, add some heat with minced jalapeno pepper. Corn is naturally sweet but if you like yours southern sweet, stir in some sugar.  But go slow – you can always add more but you can’t take it out.  Try stirring in cheddar cheese or cream cheese.  Top with crumbled bacon or diced ham to add some protein or cook with broccoli and carrots.

4. Use your grill and roast corn on the cob.

Roasted corn on the cob is also very easy. Preheat the oven to 350°F.  Remove the husks and silk from the corn.  Brush each cob with a mixture of melted butter, chives, salt, and pepper.  Place the corn on a baking sheet lined with nonstick aluminum foil and bake for 30 minutes, turning halfway through cooking time.  This makes a great side dish for a cookout, and you can also roast corn on the cob on the grill. A great way to freeze corn especially very sweet types, 1, pick early in morning 2, cut off silk end 3..chill in ice water,4 leave in husk 5. stack in freezer thaw in cold water. ears in husk easily separated and east to husk and remove silk after thawing. I have had corn in freezer for almost s year that tasted like fresh from garden. so easy and fast,
