“I’ve been cooking and experimenting with recipes for over 20 years now. I stayed in the kitchen with my grandmother after I got into high school and college. I don’t mind using recipes, but sometimes, coming up with your own recipes is just fun and turns out amazing. This meatloaf recipe is one that I came up with after using many other meatloaf recipes. So it’s not technically all my own, it’s a collaboration of many recipes put together. It has been a huge hit every time I make it. Friends who I have shared the recipe with have also said that their families love this recipe. I even have a friend who DOES NOT like meatloaf and goes back for seconds when I make this!!”
Do you have specific meals or comforting smells that just bring you right back to childhood or a specific place?
As a child I loved meatloaf. It was one of my favorites my mother made. As an adult, meatloaf is one of those classic meals I always forget is an option. With all the new exciting recipes you find all over the internet an old standby like a delicious and robust meatloaf slips my mind. However, as soon as that smell fills our home, I am instantly comforted especially in the cold snowy days of January here in Ohio.
This recipe is super simple and makes for an easy dinner when your hands are busy chasing young ones around or when you just don’t feel like chopping, dicing and sautéing. Because we all have those nights right?
Right in the middle of making this recipe I realized I didn’t have a loaf pan which is the traditional way of baking these but looking back at the recipe Mary suggested a round cast iron pan. So I whipped out my Lehman’s Cast Iron Skillet and made a meat “cake” as my daughter called it. Let me tell you it was, of course, JUST as delicious if not more. The cast iron gave it a great coating and kept the inside tender.
