Canning at Home: Where Do I Start?

FOR ALL THINGS RELATED TO CANNING
WATER BATH, PRESSURE COOKING, DRYING ARE DEHYDRATING, VEGETABLES ETC.
AND ALL POSSIBLE METHODS OF DEHYDRATING OR DRYING
AND CANNING ARE FREEZE DRYING ETC
BEEF MEAT ALL TYPES OF MEAT
POULTRY, PORK ETC
IF POSSIBLE FREEZE DRYING EQUIPMENT AND EVERY POSSIBLE WAY OF PRESERVING YOUR ABUNDANT HARVEST

I didn’t know canning could be so easy!

I have tried my own personal version of pickling as well I have made an extremely basic sauerkraut. I selected spices I like. I used zucchini. I boiled the liquid with the spices I used a combination of apple cider vinegar, water, a small amount of sugar, and garlic cloves. I was so pleased with the outcome I tried a second time. Please keep in mind I have never done any type of canning. I allowed the jars to sit on the counter top a few days and then I put them in the refrigerator. I attempted sauerkraut also. I have cirrhosis and I wanted the probiotics that the sauerkraut provided. Again I was pleased with the outcome however I have much to implement in the future. I have learned about the different equipment that can be used as well the different techniques used for both pickling as well the method used that produce a product with probiotics including canning via pressure cooker as well as water bathing canning. I am somewhat skeptical about investing the time in critiquing my current methods but I appreciate the fact of those who have it down to more or less a scientific process and preserve I am sure very tasty as well as healthy produce. I have some knowledge on how to preserve proteins, meat, chicken as well seafood or just basic fish. I would like to hear more about the process.
