Recipe of the Week: Ritz Chicken

After all, we all have to get dinner every night. Why not take a peek into what other folks do? You may find a new favorite dish.

Today’s special: Ritz Chicken, pg. 163 (Lehman’s 55th Anniversary Cookbook)
3 lbs. boneless, skinless chicken breasts
2 packages Ritz crackers, finely crushed
1/2 tablespoon seasoning salt
1/2 tablespoon pepper
1/8 tablespoon powdered garlic
1 to 1-1/2 sticks butter, melted
Rinse chicken and pat dry. Put crackers and seasonings into medium bowl. Melt butter in second, medium-sized bowl. Dip chicken into butter and roll in crumbs to coat both sides. Put covered chicken pieces into buttered 9″x13″ pan. Bake at 375° for 45 to 50 minutes. Let stand in oven 10 minutes before serving. Portion; quantity should serve 6 to 8 people.
