As the air turns crisp and Christmas approaches, I find joy in reliving some of my family traditions. Gather basic pantry staples – sugar, white Karo Syrup, heavy cream, and vanilla extract – and you’re well on your way to creating a melt-in-your-mouth masterpiece. Now, I’m not saying this is healthy by any means, but it is probably less harmful than some store-bought treats.

My family knows I’m not the most patient person, so this part is hard for me. It does take some time and some manual stirring of the caramels so that it doesn’t stick and burn to your pot; at least 30-45 minutes of stirring. You will want to use a tall pot because the mixture boils up, and you will want to use a pot with a thick bottom. Homemade Caramels


Units Scale
  • 3 pts Heavy Whipping Cream
  • 41/4 cups sugar
  • 3 cups white Karo Syrup
  • 2 tsp Vanilla


  1. Add all ingredients to a thick bottomed pot, stirring constantly.
  2. Bring to 235 degrees Fahrenheit.
  3. Pour into a buttered cookie sheet or 9 x 13 baking dish.
